Vegetarian Quesadillas

My sister found this recipe on Pinterest and I’m a huge fan. It’s comparable to a normal quesadilla, but made with sweet potatoes that add a nice sweetness to an otherwise spicy and savory dish. Makes 4–6 quesadillas.

  1. Preheat the oven to 375°F.
  2. Dice the sweet potato into ½–1 inch pieces.
  3. Toss the sweet potatoes in seasonings and olive oil.
  4. Bake for about 30 minutes until soft to the touch. Leave the oven on.
  5. Add sweet potatoes to a bowl with black beans, corn, and diced red onion. Season to taste.
  6. Lay out the tortilla bases and scoop the filling onto each one. Add cheese so the top tortilla sticks.
  7. Place a second tortilla on top and lightly brush with olive oil.
  8. Bake for 15–18 minutes at 375°F.
  9. Serve with salsa or sour cream.
